Sweet Potato Halva

Sweet Potato Halwa:

O Sweet Potatoes: 3 medium sized
Milk – 2 Tablespoons
Saffron – A Few Strands
Milk – 1 Cup
Brown Sugar – 1/2 Cup
Cardamom – 1 Teaspoon
Ghee – 2 Tablespoons
Nuts – Optional
Water to cook with to adjust consistency

Boil the sweet potatoes in water until cooked and soft.
Remove the skin, mash the sweet potatoes and keep aside

Heat up 2 tablespoon milk
Add the saffron strands to hot milk and keep aside to soak (milk goes saffron coloured).

Heat the Ghee in a pan
Add the mashed sweet potatoes and saute in Ghee for 5-10 minutes
Add 1 cup milk and cook further for 10 minutes on medium heat
Add sugar and cardamom and cook for 5 minutes
Add water to suit consistency you want and cook for 5 minutes
Add saffron milk and cook for 2 minutes

Optional: You can garnish with nuts if you want to. Serve while still hot.
