Sweet Potato Halwa:
O Sweet Potatoes: 3 medium sized
O Milk – 2 Tablespoons
O Saffron – A Few Strands
O Milk – 1 Cup
O Brown Sugar – 1/2 Cup
O Cardamom – 1 Teaspoon
O Ghee – 2 Tablespoons
O Nuts – Optional
O Water to cook with to adjust consistency
O Boil the sweet potatoes in water until cooked and soft.
O Remove the skin, mash the sweet potatoes and keep aside
O Heat up 2 tablespoon milk
O Add the saffron strands to hot milk and keep aside to soak (milk goes saffron coloured).
O Heat the Ghee in a pan
O Add the mashed sweet potatoes and saute in Ghee for 5-10 minutes
O Add 1 cup milk and cook further for 10 minutes on medium heat
O Add sugar and cardamom and cook for 5 minutes
O Add water to suit consistency you want and cook for 5 minutes
O Add saffron milk and cook for 2 minutes
Optional: You can garnish with nuts if you want to. Serve while still hot.
