Spinach and Green Pea Soup – with Ginger and Spring Onions


Ingredients:

  • Oil – 2-3 tablespoons
  • Cumin seeds – 1/4th teaspoon
  • Curry leaves – optional a few
  • Asafoetida – optional – pinchful
  • Turmeric – ½ tspn
  • Fresh grated ginger – ½ tspn
  • Spinach – Handful or more
  • Peas – a cup or more
  • Spring Onion – one medium sized
  • Salt to taste
  • Water

Instructions:

  • Heat Oil in a pan
  • Add cumin seeds, curry leaves, asafoetida
  • Add spring onions and stir for 2 minutes
  • Add turmeric powder and fresh grated ginger. Stir for 2 minutes
  • Add spinach and green peas. Cook for 5-7 minutes with lid closed. Stir occasionally
  • Add salt and water (add as much as you would like to make the thickness of soup)
  • Cook with lid closed for approximately 10 minutes
  • Remove from fire. Let t cool for 5 minutes.
  • Blend the content t make a smooth consistency

Serve while hot with steamed rice and steamed salad
